Chef Schack - Cookin on the Coast

New for the fall of 2013, Cookin’ on the Coast is a half hour cooking series which will replace YUM TV on CHEK Television. Delicious and innovative, Cookin’ on the Coast’s focus will be on the great sustainable food we have on Vancouver Island, and the remarkable dishes created by Chef Garrett Schack. Chef Schack is Executive Chef at Vista 18, Chateau Victoria’s well-loved rooftop restaurant and we here at Chateau Victoria couldn’t be prouder to see him returning to television this fall.

Chef Schack’s love of food started at the professional culinary arts program at Camosun College in Victoria, British Columbia. Upon graduation, he headed to Australia and South East Asia. This awoke his passion for working with the rich flavours found in fresh, localized ingredients. Garrett returned to Victoria with a new approach to West Coast cuisine. He worked at a selection of Victoria’s best restaurants before rising to the heights of the long-established Vista 18. He puts great importance on getting to know local farmers and food providers and is always on the look-out for new ideas and interesting ingredients. He has developed a strong team in the kitchen and with other chefs in the food community. He wants to bring the television viewers recipes that teach and inspire and the love of cooking that he enjoys at work and at home.

Between preparing an array of uniquely West Coast dishes, Chef Schack will hit the road to visit other wonderful restaurants and eateries that embrace our local food culture. Plus he’ll show you fantastic pairings with local brews, wines and cocktails. You won’t want to miss this delightful show airing tonight at 10:30pm. Visit CHEK TV for other air times.

Chateau Victoria’s Fabulous Rooftop Restaurant – Vista 18 – is Participating in This Year’s Feast of Fields September 22nd

Chateau Victoria is excited that our restaurant with a view, Vista 18, will be participating in the Feast of Fields harvest fundraiser festival this Sunday September 22nd from 1-5pm at Metchosin Farm – 542 Woolton Road, Metchosin.

Feast of Fields was created to bring together local chefs, farmers, fishers, ranchers, food artisans, vintners, brewers, distillers and other beverage producers to experience the harvest, gourmet style. Learn more and buy tickets here.

Roy Recommends – Best City Hikes – Beacon Hill Park & Mount Douglas Park

September is a beautiful time to explore the natural beauty in Victoria with a hike through a city park. Two of my favourites are Beacon Hill Park, near Chateau Victoria and Mount Douglas Park, a short 15 minute drive away.

Beacon Hill Park, located in James Bay and walking distance from the hotel, is a 200 acre historic park founded in 1858 by Sir James Douglas, governor of the Colony of Vancouver Island. It’s filled with beautiful gardens, a rustic stone bridge, numerous trails, beaches, and a lookout point with a breathtaking view of the ocean and Olympic Mountains.

Throughout the park you’ll find native Garry oak, arbutus, Douglas fir, and western red cedar trees along with swans, ducks, Canada geese and other wildlife. This park is well worth exploring.

In Saanich’s Gordon Head area you’ll find Mount Douglas Park. Begin your hike with a walk on the shores of the Mount Douglas Park beach, and then hike lush trails filled with wildflowers, Douglas fir, and cedar trees. There is a walking trail, and a steep road to take you to the mountain summit, a 213m elevation. At the top you’ll find the best view of the city – a full 360° view of rural Saanich, Victoria, and the Olympic and Cascade Mountains of Washington State. Mount Doug is a must see for anyone who visits Victoria.
