New Year’s Eve Gala Dinner

Amuse Bouche

 

1st Course

Vista 18 Green Salad – house greens, grape tomatoes, edamame beans, watermelon radish, candied sunflower seeds, maple balsamic dressing
Spinach Salad – roasted beets, balsamic cipollini onions, baby bocconcini, bacon vinaigrette
Wild Mushroom Bisque – chive foam, porcini dust
Roasted Squash Bisque – spiced fig chutney, crème fraîche

2nd Course

House Smoked Pork Belly – pear and ginger chutney, white bean purée
Wild Mushrooms on Toast – raclette cheese, rosemary focaccia
Shrimp & Shiitake Cakes – baby bok choy, ginger sesame aioli
Angus Beef Carpaccio – grilled mango salsa, black pepper brioche crostini

3rd Course

Charbroiled Beef Tenderloin – confit potatoes, braised kale, smoked gorgonzola demi
Chili Rubbed Braised Chuck Flat – smoked gouda scalloped potatoes, candied carrots, smoked tomato jam
Seared Sablefish – crispy polenta, french beans, rhubarb gastrique
Grilled Louis Lake Steelhead – warmed citrus cous cous salad, honey roasted spaghetti squash

4th Course

Flourless Chocolate Torte – coconut mousse
White Chocolate Cheesecake – saskatoon berry jelly
Vanilla Panna Cotta caramelized fig and blackberry compote, brandy snap
